Romain Lassiaille
Romain spent 18 years as a pastry chef in Michelin-starred palace hotels: the Four Seasons George V, the Royal Monceau, the Vernet.
He did not simplify when he left Paris. He brought everything – the technique, the obsession with detail, the belief that a single dessert should stop you in your tracks.
What changed is the setting. Instead of a palace dining room, it is a garden in the South West of Western Australia. The chocolate is still tempered to the degree. The standards have not moved.
Maison Lassiaille was born in the South West of Western Australia – a region known for its beauty, its produce, and its people who appreciate the finer things. What began as a new chapter became a permanent home. Today, Maison Lassiaille is Romain’s own – a small, independent patisserie where every product is made by hand, to the standards of the great Parisian houses, for the people of Margaret River.
